Citrus Salad With Coconut And Peanuts
Serves 4
Ingredients
1 grapefruit, peeled and cut into segments
1 blood orange, peeled and cut into segments
2 bunches watercress or arugula
3 tbsp grapefruit juice
1 tbsp blood orange juice
1 tbsp lemon juice
2 tbsp honey
2 tbsp olive oil
3 garlic heads, crushed
3 tbsp chopped coriander
1 tsp chili flakes
salt to taste
To serve
1/4 cup desiccated coconut, toasted
1/4 cup onions, fried
1/4 cup peanuts, toasted and roughly chopped
In a large bowl, flake the grapefruit and blood oranges and mix together with the watercress. In a container, mix together the next seven dressing ingredients and season with salt. Toss the salad with the dressing. Sprinkle with coconut, fried onions and toasted peanuts. Serve immediately.
